Smoked Bacon Jerky

Smoked Bacon Jerky



Ingredients:
  • 1 Pound of Thin Cut Bacon
Procedure:
  1. Light about 25 coals and a few small pieces of your favorite smoking wood in the side box of a grill.
  2. Place the Bacon Strips directly on the grill, leaving a little space between them for the smoke.
  3. Keep the temperature inside the grill between 225 and 250 degrees for the first 30 minutes.
    1. Turn the Bacon and Switch the more cooked and less cooked Bacon 15 minutes in.
  4. Reduce the temperature to 170-190 degrees for the remaining 4 hours of the smoke.
  5. Every hour, turn the bacon and remove some of the grease with a paper towel.
    1. This step is important.
  6. You'll know you're done when the Bacon meat is a mahogany color and the fat is dry to the touch.
  7. You can store the Bacon Jerky in an airtight container for several months, but optimally, you should consume it within a month and a half.
  8. You're Done!
With a passion for Bacon and the need to consume it as often as possible. Note: This recipe works only if you follow carefully, cooking the bacon, but not crisping it at the beginning, and removing as much moisture as possible throughout the smoking process.
In this recipe, I use Cherry wood. You can use other woods such as walnut, hickory, and apple. Since this has such a long smoke time (about 4.5 hours), you will taste the wood distinctly.
Alternately, you can make this recipe in an oven. Simply cook the Bacon at 250 for about 25-30 minutes until cooked, but not crisp. Then, reduce the temperature to 180 degrees and let it dehydrate for 4 hours, occasionally dabbing the Bacon with a paper towel to remove any moisture. The Oven door should be cracked open with a wooden spoon to allow the humidity to escape.
You'll know the Bacon Jerky is ready when the fatty parts are dry to the touch and the meat is a deep mahogany color. If kept in an airtight container, the Jerky can last for up to 8 months, but I recommend consuming it in the same month it was made.

Chocolate Covered Bacon

Chocolate Covered Bacon



Ingredients:
  • 4 Strips Thin Cut Bacon
  • 1/2 Cup Semi-Sweet Chocolate Chips
Procedure:
  1. Crisp the Bacon fully in a pan, then let cool completely on paper towels.
  2. Microwave the Chocolate until it just starts to melt (about 1 minute), then stir until smooth.
  3. Use a Fork or spoon to carefully ladle chocolate over both sides of each Bacon strip.
  4. Let dry completely on a drying rack for about an hour.
    1. Alternately, dry the chocolate in a refrigerator for 15 minutes.
  5. You're Done.
The classic Chocolate and Bacon combination is unlike anything I could have imagined in my wildest dreams.  There seem to be no limits in the world of Bacon.

Blanched Bacon

Blanched Bacon



Ingredients:
    • 1 Quart Cold Water
    • 4 Strips Thick Cut Bacon
Procedure:
  1. Put the Bacon in the Cold Water in a pan and bring to a boil.
  2. Simmer for 10 minutes then rinse off Bacon and dry.
  3. You're done.
    1. Optionally fry the Bacon over medium/low heat for 10 minutes to crisp
When a French recipe calls for Bacon, it is talking about unsalted and unsmoked Bacon.  Since this is not easy to come by in the States, you can replicate the flavor by blanching the Bacon.  This is a simple alternative to French Bacon.  This makes sure when you put the Bacon in a dish, it is not overpowering.  You may eat the Bacon after blanching or fry it up like I did in the video.  It's a completely different Bacon experience, but it gets you to appreciate the flavor of the meat over the smokiness or saltiness of Bacon.

Egg Cups

Egg Cups



Ingredients (per cup)
  • 1 Strip Thick-Cut Bacon
  • 1 Large Egg
Procedure
  1. Preheat oven to 350 degrees.
  2. Crisp Bacon in a pan to your liking.
  3. Transfer Bacon to a paper towel to de-grease and immediately curl into a ring in a muffin tin.
    1. See video above
  4. Crack the Egg directly into the Bacon ring.
  5. Bake for 10 minutes to make the Egg Yolk runny or 13 to make it hard-boiled.
  6. You're Done!
There may be easier ways to prepare Bacon and Eggs, but this is a fun way of making the classic breakfast dish into something more fun and more beautiful.  Alternately, line the muffin tin with Butter or Bacon Fat and make a base out of Hash Browns.

Bacon Cupcakes

Bacon Cupcakes



Ingredients for the Cupcakes:
  • 1-1/2 Cups All-Purpose Flour
  • 1-1/2 Teaspoons Baking Powder
  • 1/4 Teaspoon Salt
  • 6 Tablespoons Unsalted Butter
  • 3/4 Cup Granulated Sugar
  • 1 Large Egg
  • 1 Egg White
  • 1 Teaspoon Vanilla Extract
  • 1/2 Cup 2% or Whole Milk
  • 4 Strips of Candied Bacon, Chopped - Recipe Here
Procedure

  1. Preheat oven to 350 degrees.
  2. Whisk together the Flour, Baking Powder, and Salt. Set aside.
  3. In a Mixer, whisk the Butter and Sugar on a high speed until thoroughly combined.
  4. Then, add the Egg and Egg White, whisking on medium speed until fluffy.
  5. Add in the Vanilla Extract and whisk briefly.
  6. Whisk in the Flour mixture in three parts, alternating with the Milk in two parts.
  7. Gently fold in the Candied Bacon, being careful to not over-stir.
  8. Divide evenly among 12 slots in a muffin tin and bake for 18-22 minutes until golden brown.
  9. Let Cool 1 hour before use.

Ingredients for the Frosting:
  • 1-1/2 Cups Semi-Sweet Chocolate Morsels
  • 1/4 Cup Heavy Cream
  • 1/2 Teaspoon Vanilla Extract
Procedure:
  1. Combine the Chocolate and Cream in a microwaveable bowl and microwave for about 30 seconds.
  2. Stir until the Chocolate is completely melted and the mixture is a thick, smooth consistency.
  3. Stir in the Vanilla Extract and put in the refrigerator for 1 hour before use.
This is also great if you crumble some Candied Bacon over the top of the cupcake like in the video above.  It looks beautiful.

Bacon Crisped Rice Treats



Ingredients:
  • 8 Bacon Strips
  • 6 Cups Crisped Rice Cereal
  • 1/2 Stick Butter
  • 1 Packet of Marshmallows
Procedure:
  1. Crisp the Bacon Strips in a pan over medium heat for 12 to 15 minutes and set aside.
  2. In a large saucepan, melt the butter over low heat.
  3. Add the Marshmallows and stir constantly until the Marshmallows are completely melted.
  4. Pour the Marshmallow mixture over the Crisped Rice in a large bowl, folding gently to combine.
  5. Chop up the Bacon into 1/4 inch pieces and add to the mixture.
    1. Fold gently to combine.  Do not over-stir.
  6. Scrape the mixture into two 13 inch baking tins, pressing gently to even.
  7. Let sit for 1 hour before serving.
  8. You're Done!
Spice up your life and your simple treats with the food of the gods...bacon.  This is a classic example of how world peace can be accomplished.

Candied Bacon Jerky

Candied Bacon Jerky

Makes: 8 Pieces          By: CookingWithBacon


Ingredients:
  • 8 Bacon Strips
  • 1/4 Cup Packed Brown Sugar
  • 1/4 Teaspoon Cayenne Pepper
Procedure:
  1. Preheat oven to 225 degrees
  2. In a shallow dish, combine the Brown Sugar and Cayenne Pepper.
  3. Take each piece of Bacon and cover in the Brown Sugar mixture, rubbing it in, then place on a baking Sheet.
  4. Bake for 2 to 2-1/2 hours until the Bacon is a deep mahogany color such as it appears above, turning the Bacon after 1 hour.
  5. Let the Bacon cool on a drying rack before eating.
  6. You're done!
This is the candiest of the meat candy.  I never thought I would like it as much as I do.  The sweetness and saltiness combine in the loveliest way.  It brings a joyful tear to the eye.

How to Make Bacon



Ingredients:
  • 2.5 lb Pork Belly
  • 2 Cups Kosher Salt
  • 1 Cup Brown Sugar
The Cure:
  1. Score the skin side of the Pork Belly
  2. Combine the Salt and Brown Sugar and rub generously over the Pork Belly.
  3. Transfer the Pork Belly and Salt mixture to a zip seal bag and refrigerate for 7 days.
    1. During the 7 days, make sure to remove any moisture and to flip occasionally.
  4. After the 7 days, lightly rinse the Pork Belly and pat dry.
  5. Place uncovered in the fridge for another day to form a pellicle.
    1. The pellicle is the ooey gooey disgusting mucusy layer that forms over cured meats.  This is essential for the Bacon to retain the smokey flavor.
The Smoke:
  1. Smoke the Bacon in a grill using about half the coals you'd normally use and with whatever wood you prefer.
    1. I usually use hickory.
  2. The Bacon will smoke for 2-3 hours until it looks like the Bacon in the video above.
    1. It is important that the Bacon always be under 200 degrees.  You do not want to cook it now!
  3. Once smoked, carefully cut off the rind while still warm, leaving as much of the fat as possible.
  4. You're Done!
Please, be careful! A proper homemade Bacon will make the assimilation into the store-bought Bacon routine you're probably used to more difficult than you can imagine.  This will be the best Bacon you ever have.  Also, in the Curing process, feel free to make it your own, adding other spices like cayenne or whatever you want.

Bacon Grilled Cheese

Bacon Grilled Cheese




Ingredients:
  • 8 Bacon Strips
  • 2 oz. White Cheddar Cheese
Procedure:
  1. Weave the Bacon Strips in a pan as seen in the video above.
    1. The resulting weave should be 4 Strips by 8 Strips where the 8 are half Strips.
  2. Crisp the Bacon over medium low heat until its starting to crisp, carefully flipping once.
  3. Cut the cheese into 1/8 inch slices and cover the weave with it.
  4. Cover the pan for about 1 minute until the cheese has started to melt.
  5. Fold over the weave and transfer to paper towels to take out some of the grease.
  6. You're Done!
Are you craving a Grilled Cheese but you just can't find any bread?  We know that's not the reason you're looking at this.  You just want the Bacon.

Bacon Jalapeno Poppers

Bacon Jalapeno Poppers

Makes: 8 Poppers          By: CookingWithBacon



Ingredients:
  • 6 Bacon Strips
  • 4 oz. Cream Cheese
  • 1/4 Teaspoon Paprika
  • 1/4 Teaspoon Red Pepper
  • 4 Jalapenos
Procedure:
  1. Crisp 2 Bacon Strips in a pan over medium heat and chop finely.
  2. In a bowl, combine the two aforementioned Bacon Strips, Cream Cheese, Paprika, and Red Pepper.
  3. Cut the Jalapenos in half and fill with the Cream Cheese mixture.
  4. Cut the remaining Bacon Strips in half and wrap around the filled Jalapeno halves.
  5. Grill until the Bacon is crispy, starting with the open side of the Jalapenos down.
  6. You're Done.
These are a simple snack to make for appetizers or any occasion.  The most important part of this is the cream cheese.  Adding the Bacon, Paprika, and Red Pepper adds the much-needed flavor that other Jalapeno Poppers lack.

Ingredients:
  • 1 Cornish Game Hen
  • 1/2 Teaspoon Garlic Powder
  • 1/2 Teaspoon Fresh Ground Black Pepper
  • 16 Slices Thick Cut Bacon
Procedure:
  1. Rub the Garlic Powder and Black Pepper into the Cornish Hen.
  2. Weave the Bacon over the top then the bottom of the Hen as seen in the video above.
  3. Bake at 375 degrees in a turkey pan for about 75 minutes, until the meat is 180 degrees.
  4. You're Done.
Oh my.  Not only will this give you the juiciest Cornish Game Hen you ever had, but this is some of the best bacon you can get, with the Hen's juices baked in.

Bacon Bowls

Ingredients:
  • 12 Slices of Thick Cut Bacon
Procedure:
  1. Weave Bacon over the outside of a bowl as seen in the video above.
  2. Bake at 375 degrees for 30 minutes.
  3. Transfer to the inside of a bigger bowl and continue cooking for another 15-20 minutes.
  4. Completely cool and dry the Bacon in the bowl so it retains its shape
  5. You're Done.
I keep seeing pictures of people putting salads in these things.  The only thing I could figure is they didn't realize they could add more Bacon.  Poor souls.

Bacon Black Bean Soup

Bacon Black Bean Soup




Ingredients:
  • 10 oz. Dried Black Beans
  • 6 Strips Thick Cut Bacon
  • 2 Green Onions - diced
  • 2 Jalapenos - diced
  • 1 Tablespoon Unbleached All-Purpose Flour
  • Salt and Pepper
  • 1/2 Teaspoon Garlic Powder
  • 3/4 Tablespoon Garam Masala
  • 1-1/2 Cups Stock (Chicken or Turkey)

Procedure:
  1. Reconstitute Black Beans by covering with water in a saucepan, boiling for 2 minutes, covering for 1 hour, then straining them.
  2. Cook the Bacon in a pan over medium heat 12-15 minutes until crispy.
  3. Pour off all but 1 Tablespoon of the Bacon fat an use it to cook the Green Onions and Jalapenos.
  4. Once the Vegetables are soft, sprinkle over the Flour and stir for 40 seconds.
  5. Pour over the Stock, Salt and Pepper, and the Spices, stir in, and let steam for 20 minutes.
  6. Transfer to a pot and cover with 1 quart of boiling water and let simmer for 2-1/2 hours.
  7. Pour off the liquid until the Beans are just covered and simmer for another 20 minutes.
    1. Keep the Liquid you Pour off.
  8. You're Done.
I'm waiting for Spring, but in the meantime, let's all cuddle up with a nice warm bowl of Bacon Black Bean Soup.

Bacon Wrapped Baked Potato

Bacon Wrapped Baked Potato




Ingredients:

  • 1 Medium Potato
  • Olive Oil
  • Salt and Pepper
  • 2 Strips Thick Cut Bacon
  • 1 Toothpick
Procedure:
  1. Preheat oven to 475 degrees
  2. Toss Potato in warm water for 10 minutes, then remove and dry completely.
  3. Poke 6-12 small holes in the top of the Potato.
  4. Coat lightly with Olive Oil, Salt, and Pepper and set directly on oven rack for and immediately turn the temperature down to 375 degrees.
  5. After 30 minutes, take the Potato out and wrap the Bacon around it, using the Toothpick to hold it in place.
  6. Bake for another 30-40 minutes until the Bacon is properly crispy.
  7. You're Done.
Did you ever eat a Baked Potato and think that it would be better without the Bacon? We didn't think so.  Next time you go for a Baked Potato, make sure you wrap it in meat candy.

Bacon Poutine

Bacon Poutine



Ingredients:

  • 3 Large Potatoes
  • Olive Oil
  • Salt and Pepper
  • 4 Strips Bacon
  • 1/4 Cup White Cheddar Cheese - cubed
  • 2 Tablespoons Unbleached All-Purpose Flour
  • 1 Cup Beef Broth
Procedure:
  1. Preheat oven to 475 degrees
  2. Throw Potatoes in warm water for 10 minutes, then remove and dry completely.
  3. Skin Potatoes and cut into 1/4 inch wedges.
  4. Coat lightly with Olive Oil, Salt, and Pepper.
  5. Place 1 wedge thick on salted Baking sheet and cover with Aluminum Foil.
  6. Bake for 12 minutes, then remove the Foil and bake for another 8 minutes.
  7. Flip over the Wedges and bake for another 12 minutes.
  8. Meanwhile, cook the bacon over medium heat for 12 minutes or until crispy and set aside.
  9. Pour off all but 2 tablespoons of the Bacon fat and bring to a simmer.
  10. Sprinkle over the flour and let simmer until golden brown, stirring constantly.
  11. Add in the beef broth and simmer until it reaches a gravy consistency, see video.
  12. Plate the Fries first, followed by the crumbled Bacon, then the Cheese Cubes, finally the Gravy.
  13. You're Done.
If ever there was a way to unite Canada and the U.S., this is it.  I made this recipe side by side with Cuban Jerked Pork, and this stole the show.

Pancake Tacos

Pancake Tacos


Ingredients:

  • 6 Strips Bacon
  • 2 Large Eggs
  • 1 Tablespoon Heavy Cream
  • Salt and Pepper
  • 1 Cup Shredded Cheddar Cheese
  • 1 Pancake (See Previous Entry)
Procedure:

  1. Before you do anything make the Pancake, as seen in previous entry.
  2. In a pan, weave the Bacon into a somewhat circular shape, as seen in the video
  3. Cook over medium heat for 12 minutes and remove from pan.
  4. Pour off all but 1 Tablespoon of Bacon grease.
  5. In a bowl, whisk Egg, Heavy Cream and Salt and Pepper.
  6. Pour into the pan with Bacon grease.
  7. Add cheese to one side of the Egg mixture and cook until the Cheese is completely melted.
  8. Fold the Egg in half in the pan and continue to cook for about 1 minute until the Egg retains shape.
  9. Build the Taco by placing the pancake on a plate, placing the bacon on top, and the egg on top of that.
  10. You're Done.
Bacon, Taco, Omelette, Cheese, Pancake...These are a few of my favorite things.  Excellent breakfast on the move and easy way to impress yourself.

Bacon Pancakes

Bacon Pancakes

Ingredients:

  • 3 Strips Bacon
  • 2 Cups Milk
  • Juice of 1/2 Lemon
  • 2 Cups Flour
  • 2 Tablespoons Sugar
  • 1/2 Teaspoon Salt
  • 2 Teaspoons Baking Powder
  • 1/2 Teaspoon Baking Soda
  • 1 Large Egg
Procedure:

  1. Cook Bacon in pan over medium heat for 12 minutes or until properly crispy.
  2. In a bowl, Whisk Milk and Lemon until frothy. Set Aside.
  3. In a Separate bowl, combine all dry ingredients
  4. Crack Egg into Milk/Lemon mixture and stir until thoroughly combined.
  5. Create a hole in the middle of the dry ingredients with a fork.
  6. Pour in the wet ingredients slowly, mixing all the while.
  7. Do not over mix!
  8. Ladle out 1/4 cup of the pancake batter into a lightly oiled pan over medium heat.
  9. Crumble a small portion of the crispy bacon over the pancake.
  10. Do not touch at all until about 2 minutes have elapsed and you see large bubbles on the surface.
  11. Flip the pancake over with a swift flick of the wrist. This may take some practice.
  12. Allow to cook for another minute to minute and a half.
  13. You're done. Garnish with Bacon as necessary.
These are a great way to start your day.  The combination of Maple Syrup and Salty Bacon is unrivaled in the breakfast world.

Bacon Biscuits

Bacon Biscuits

Cost: $4.53          Cost Per Serving: $0.75          Makes: 24 Biscuits          By:CookingWithBacon

Ingredients:

  • 1 Cup Warm Whole Milk (110 degrees)
  • 2 Teaspoons Granulated Sugar
  • 2-1/2 Teaspoons Instant Yeast
  • 1 Large Egg - Scrambled
  • 4 Cups Unbleached All-Purpose Flour
  • 1-1/2 Teaspoons Salt
  • 12 Tablespoons Warm Butter
  • 6 Strips Bacon

Procedure:

  1. Combine the Milk and Sugar in a bowl until well mixed.
  2. Add in the Yeast and Egg and set aside for at least 5 minutes.
  3. In a mixer on its slowest setting, combine Flour and Salt.
  4. Add in the wet ingredients slowly and let it combine completely.
  5. Throw in 8 Tablespoons of the butter, one at a time.
  6. Replace the paddle of the mixer with the dough hook and let mix for about 6 minutes.
  7. If a ball has not formed, add in Flour 1 Tablespoon at a time until a ball forms.
  8. Kneed the dough by hand for a minute.
  9. Cover and let sit for 45 minutes.
  10. Crisp the Bacon in a pan over medium heat for about 12 minutes.
  11. Remove and chop into small pieces.
  12. Punch down dough and let sit for another 5 minutes.
  13. Press the dough to create a pocket for the Bacon.
  14. Kneed the Bacon into the dough until evenly distributed (About 4 minutes)
  15. Shape the dough into a log and cut in 24 pennies.
    1. Smash the Pennies if you are making buns. I am.
  16. Slather the rest of the Butter on a baking sheet and nestle the pennies into the Butter
    1.  Optionally melt Butter over the tops of the Biscuits.
  17. Let rise for another 45 minutes.
  18. Bake at 375 degrees for 20-22 minutes until golden brown.
  19. You're Done.
I used this recipe to make fun buns for Bacon Cheeseburgers, but they go best with soups and breakfast.  Hope you enjoy!

Baby Breakfast Pizzas

Ingredients for the Dough:
  • 2-1/2 Tablespoons Instant Yeast (1 Packet)
  • 1/2 Cup Warm Water (110 degrees)
  • 3/4 Cup Room Temperature Water
  • 2 Tablespoons Extra Virgin Olive Oil
  • 2 Cups Unbleached All-Purpose Flour
  • 1 Teaspoon Salt
Procedure:
  1. Combine Yeast and Warm Water in bowl and let sit for 5 minutes.
  2. Add in the Room Temperature Water and Olive Oil.
  3. In a mixer, Combine the Flour and Salt.
  4. Add in the wet ingredients two Tablespoons at a time until a ball is formed.
  5. Place in a deep bowl and let sit for 2 hours.
  6. You can refrigerate the dough overnight if you place in a zip seal bag.
Ingredients for the Toppings:

  • 3 Strips Bacon
  • 3 Large Eggs
  • Salt and Pepper to taste
  • 2 Cups Shredded Cheddar

Procedure:

  1. Cook Bacon in pan over medium heat for about 12 minutes until brown and crispy.
  2. Remove Bacon and crack Eggs into pan, stirring constantly to pick up any leftover Bacon pieces.
  3. Salt and Pepper the Eggs and put in bowl once just cooked.
  4. Cut the Dough into 4 pieces and kneed separately, constantly pushing the Dough to the edges.
  5. Flip the Dough and continue kneeding until the dough is 6 inches in diameter.
  6. Place the Dough on a non-stick tray.
  7. Divide the Eggs among the Pizzas, evenly coating the surfaces.
  8. Break up the Bacon and distribute evenly among the pizzas.
  9. Add the Cheese.  Copious amounts are acceptable.
  10. Bake at 400 degrees for 15 minutes or until the Cheese is golden brown.
  11. You're done.

This is an excellent way to serve a portable version of Bacon and Eggs.  A great breakfast on the go.

Ingredients for the Sauce:
  • 3 Slices Bacon
  • 1 Large Onion - diced
  • 1 Celery Stalk - diced
  • 1 Handful Pepitas
  • 1 Poblano Pepper - diced
  • 1 Clove Garlic - chopped
  • 2 Tablespoons Dry Vermouth
  • Salt and Pepper
Procedure:
  1. Render the Bacon over medium heat for about 12 minutes until crispy.
  2. Remove the Bacon and put the Onion, Celery, Pepitas, and Pepper.
  3. Cook until the vegetables are softened, about 12 minutes.
  4. Add in the Dry Vermouth and cover for another 5 minutes.
  5. Uncover and add the Garlic and Salt and Pepper to taste.
  6. Cover and cook for another 8 minutes until vegetables are completely softened.
Ingredients for the Sausage:
  • 1 Pound Ground Pork
  • 1/2 Teaspoon Paprika
  • 1/2 Teaspoon Thyme
  • 1/2 Teaspoon Parsley
  • 1/2 Teaspoon Oregano
  • Salt and Pepper to Taste
Procedure:
  1. Combine all Sausage ingredients until thoroughly combined.
  2. Cook in pan over medium heat for 16 minutes or until it starts to brown.
  3. Use the spatula to chop up the Sausage into small pieces.
Ingredients for the Cheese:
  • 2-1/2 Cups Shredded Mozzarella
  • 3/4 Cup Shredded Swiss
  • 1/4 Cup Parmesan
  • Cracked Pepper
Procedure:
  1. Combine all Ingredients in a bowl.
Assembly:
  1. Kneed the Dough for 4 minutes, constantly flipping and pressing towards the edges.
  2. Transfer the dough to a dish coated in Olive Oil.
  3. Wipe Olive Oil on top of the Crust so the dough doesn't get soggy.
  4. Add the Sauce, evenly distributing to the edges.
  5. Next, add the cheese mixture with the same technique.
  6. Crumble the Bacon over the Cheese and under the Sausage so it doesn't burn.
  7. Bake for 25 minutes at 425 degrees or until the cheese becomes golden brown.
  8. You're Done.
Wow.  What an excellent pizza.  This is simple to make and a dream to eat for any pork lover.  Be sure to add more bacon as you see fit.

Braised Short Ribs with Onion Fennel Glaze

Braised Short Ribs with Onion Fennel Glaze

Ingredients for the Short Ribs:
  • 2 Pounds Short Ribs
  • Salt and Pepper
  • 1 Cup Red Wine
  • 1 Large Onion - diced
  • 1 Carrot - diced
  • 1/2 Celery Rib - diced
  • 3 Garlic Cloves - Minced
  • 1/8 Cup Unbleached All-Purpose Flour
  • 1-1/2 Cups Turkey or Chicken Broth
  • 3 Roma Tomatoes - diced
  • 1/2 Teaspoon Rosemany
  • 1/2 Tablespoon Thyme
  • 1 Tablespoon Tomato Paste
Procedure:
  1. Preheat oven to 400 degrees
  2. Salt and Pepper the Short ribs and place in pot bone side down.
  3. Cook in oven for 45 minutes then take out and pour grease into a separate bowl.
  4. Return the Short Ribs to the oven for another 15 minutes until nicely browned.
  5. Reduce oven temperature to 300 degrees.
  6. Place the Short Ribs aside and pour the grease from the pot.
  7. Pour in the Red Wine and bring to a simmer, making sure to collect all the bits of Short Rib.
  8. Set aside.
  9. In a Dutch Oven over medium high heat, warm 2 Tablespoons of the Short Rib grease.
  10. Toss in the Onion, Carrot, and Celery, stirring occasionally for about 12 minutes.
  11. Once the vegetables are softened, add in the garlic, stirring constantly for 30 seconds.
  12. Then, add in the flour and stir for 45 seconds.
  13. Pour in the wine you set aside, Turkey Broth, Tomatoes, Rosemary, Thyme, and Tomato Paste.
  14. Bring to a simmer and add salt as necessary.
  15. In your original pan, place the short ribs and pour over the Dutch Oven mixture.
  16. If the Short ribs are not completely covered, add water.
  17. Cover and bake in the oven for 2 hours.
  18. Remove the Short Ribs and strain the vegetables, removing the fat with a spoon.
  19. Set Aside.
Ingredients for the Glaze:
  • 4 Slices Bacon
  • 1 Large Onion
  • 1/2 Fennel Bulb
  • 1/4 Teaspoon Sugar
  • 1/4 Teaspoon Salt
  • Black Pepper and Thyme to taste
Procedure:
  1. Place Dutch Oven over medium heat.
  2. Cook the slices of Bacon for about 12 minutes until crispy and remove.
  3. Throw in the Onion and Fennel Bulb, cooking for about 8 minutes:
  4. Add the Sugar to help the Onion caramelize then add the salt.
  5. Cook until golden brown.
  6. Add in the strained liquid from the Short Ribs and bring to a simmer.
  7. Nestle in the Short Ribs and cook for about 5 minutes.
  8. Plate the Short Ribs with the Onion Fennel Glaze and Garnish with Bacon.
  9. You're Done.
This is a great recipe to impress the in-laws or just the family.  You will end up with Short Ribs that fall off the bone and taste like a dream.  These can be refrigerated for up to 3 days to maximize flavor infusion, so don't be scared to take your time.  The wine used in this recipe was a Bordeaux, but any full-bodied red will do.

Bacon Buddy

Bacon Buddy

Ingredients:
  • 2 Strips of Bacon
  • 1 English Muffin
  • 1 Large Egg
  • 1 Cheese Square
  • 1 Teaspoon Salted Butter
  • 1 Pinch Black Pepper
Procedure:
  1. Slice the English Muffin and toast lightly.
  2. Cut Bacon Strips in half and cook over high heat in small pan until brown.
  3. Take out bacon and put on paper towels.
  4. Crack Egg into pan with Bacon grease.
  5. Cook the Egg Sunny-Side-Up until Egg whites are fully cooked.
  6. Add Pepper to taste
  7. Butter the toasted English muffin and slide the Egg on one bun.
  8. Put the Cheese Square on top of the Egg.
  9. Stack the Bacon on the other bun.
  10. Toast in a toaster oven for 1 minute and put the sandwich together.
  11. You're done.
This is an excellent breakfast sandwich.  Its simple and inexpensive, taking less than 10 minutes and 2 dollars to make.
