Bacon Pancakes

- 3 Strips Bacon
- 2 Cups Milk
- Juice of 1/2 Lemon
- 2 Cups Flour
- 2 Tablespoons Sugar
- 1/2 Teaspoon Salt
- 2 Teaspoons Baking Powder
- 1/2 Teaspoon Baking Soda
- 1 Large Egg
Procedure:
- Cook Bacon in pan over medium heat for 12 minutes or until properly crispy.
- In a bowl, Whisk Milk and Lemon until frothy. Set Aside.
- In a Separate bowl, combine all dry ingredients
- Crack Egg into Milk/Lemon mixture and stir until thoroughly combined.
- Create a hole in the middle of the dry ingredients with a fork.
- Pour in the wet ingredients slowly, mixing all the while.
- Do not over mix!
- Ladle out 1/4 cup of the pancake batter into a lightly oiled pan over medium heat.
- Crumble a small portion of the crispy bacon over the pancake.
- Do not touch at all until about 2 minutes have elapsed and you see large bubbles on the surface.
- Flip the pancake over with a swift flick of the wrist. This may take some practice.
- Allow to cook for another minute to minute and a half.
- You're done. Garnish with Bacon as necessary.
