Bacon Poutine

- 3 Large Potatoes
- Olive Oil
- Salt and Pepper
- 4 Strips Bacon
- 1/4 Cup White Cheddar Cheese - cubed
- 2 Tablespoons Unbleached All-Purpose Flour
- 1 Cup Beef Broth
Procedure:
- Preheat oven to 475 degrees
- Throw Potatoes in warm water for 10 minutes, then remove and dry completely.
- Skin Potatoes and cut into 1/4 inch wedges.
- Coat lightly with Olive Oil, Salt, and Pepper.
- Place 1 wedge thick on salted Baking sheet and cover with Aluminum Foil.
- Bake for 12 minutes, then remove the Foil and bake for another 8 minutes.
- Flip over the Wedges and bake for another 12 minutes.
- Meanwhile, cook the bacon over medium heat for 12 minutes or until crispy and set aside.
- Pour off all but 2 tablespoons of the Bacon fat and bring to a simmer.
- Sprinkle over the flour and let simmer until golden brown, stirring constantly.
- Add in the beef broth and simmer until it reaches a gravy consistency, see video.
- Plate the Fries first, followed by the crumbled Bacon, then the Cheese Cubes, finally the Gravy.
- You're Done.
